Eat good, feel good: recipes by el-thy.

Eating healthy foods not only helps to keep us physically well, but it can have a positive impact on our mood, our energy and our ability to think clearly too. Our gut can also reflect how we’re feeling inside. If you’re feeling stressed or anxious your digestive system can slow down or speed up. Our friends and el-thy have provided some healthy recipes you can try at home to help you look after your mind and body.

What is el-thy?

Chocolate protein bites

Ingredients:

  • ¾ of cup smooth or crunchy peanut butter
  • 1 tbsp coconut oil, melted
  • 2 tbsp raw honey or maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp cinnamon powder 
  • ½ cup plant-based protein powder (or finely ground seed mix flour)
  • 2 tbsp glutamine powder or 1 tbsp of oat, soya, almond milk or normal milk
  • 70g dark chocolate
  • 1+ tbsp el-thy 
  • Pinch of sea salt

Method:

  1. Place some vegetable paper in a non-stick baking dish, around 9 x 19 cm (or slightly larger).
  2. Mix peanut butter, coconut oil, sweetener of choice, vanilla extract, cinnamon, protein powders in a bowl. Mix until even. If the texture is too loose, you can add more protein powder. Each powder will give a different texture. Some protein powders are very fine and you will need more. The texture you are looking for is like cookie dough. 
  3. Place the dough in the dish and flatten it out. 
  4. Melt the chocolate on low heat. Then pour it over the dough. Use a spoon to spread it out. Top up with el-thy and some sea salt flakes.
  5. Place in the fridge for at least an hour. Once ready, cut up into delicious bite-sized pieces.

Beetroot salad

Ingredients:

  • 2 big beetroot
  • 2 tsp dijon mustard 2-4 tsp lemon juice 
  • Pinch of sea salt
  • 1 tbsp el-thy seeds

Method:

  1. Peel and grate the beetroot. Mix dijon mustard, lemon juice, and salt. Add the mix to the grated beetroots and mix well. Add el-thy on top.
  2. You can already serve this as a side dish or starter, it’s delicious as it is. But if you want to make the salad, carry on!
  3. Take your favourite green salad mix and put it in a bowl. 
  4. To make a simple dressing, use 1 part vinegar and 3 parts olive oil. Add a pinch of salt and pepper and mix it well together. Then add a little garlic if you like.
  5. Then mix the salad dressing with the salad, add the beetroot mix and top it off with your el-thy!

Porridge

1 large serving (or two small eaters…)

Ingredients:

  • 6 tbsp of oats (40-50 grams)
  • 250ml water
  • 100ml oat, soya, almond milk or normal milk
  • A pinch of salt
  • 1 banana, sliced
  • ¼  teaspoon of cinnamon
  • 1 teaspoon of honey or syrup (optional)
  • 1 tbsp of el-thy 

Method:

  1. Add the water, oats, and salt to a pan.
  2. Get up to boiling, and then allow to simmer gently for 5 minutes.
  3. Add the milk and let it bubble for one minute.
  4. Turn off the heat and let it cool off for a minute or two.
  5. Transfer to a bowl and then arrange the banana in a pleasing way.
  6. Sprinkle on cinnamon, and top honey/syrup or another sweetener of choice. Finally, add your el-thy!
